Hey there you beautiful little ray of sunshine you! I’m currently enjoying my morning relaxing and decompressing before I get ready to start my work week tomorrow.

What a treat right?! Starting your work week on a Friday. Hah!

I posted my zoodles on Instagram and you guys made it clear you wanted that pasta sauce recipe like yesterday. Not today, not tomorrow. Yesterday.

Get on it, Nash. You keepin’ people waiting.

I mean, who wouldn’t want this pasta sauce recipe? It is HELLA good. …it’s a NorCal thing, just ignore it.

Well, I’m happy to have finally got my damn act together. I figured out how to post a recipe.

Que some sort of victory music. Eye of the tiger??? Sure, whatever.

It’s freakin’ complicated guys. Why can’t things be user-friendly? I think I’m fairly smart most of the time. Sometimes questionable, I ain’t even gonna lie.

But, I think I finally figured it out… I’m just praying your hopes aren’t high for my first blog about food because all these bells and whistles are making my brain want to internally combust.

I made this recipe because I was craving some good ol’ spaghetti and meatballs. But pasta ain’t paleo, sooooo… I ain’t goin’ near dem grains. Nuh uhhhhhhh, girlfriend.

Zoodles would do the trick though! Some tasty zucchini noodles with that spaghetti sauce… MMMMMM!!!

It’s super low carb and healthy AF compared to traditionally processed pasta too. WIN, WIN in my book. I’m all about that paleo-ish lifestyle.

I say ‘paleo-ish’ because I’m MOSTLY paleo. Not strict. I was for a few years, but I needed more help fueling my workouts with varied carb sources.

I added white rice (to replenish glycogen stores and provide quick energy) and rolled oats (a complex carbohydrate that is low on the glycemic index). AND dark chocolate, because let’s be real, NO ONE can live without chocolate in their life.

If you can live without chocolate, you are not a real person and I cannot have that kind of negativity in my life.

So I had zoodles on my mind. But not just zucchini in the shape of noodles, I mean DUH… Let’s not be boring.

All I needed was some pasta sauce. Easy day. I didn’t have the time for the meatballs, although that would have been BOMB.

I’m walking through the aisle of the grocery store and swimming in all the pasta sauce I could ever want. Obviously, I’m THAT PERSON standing there in everyone’s way, checking every label looking at the ingredients.

Is it clean? No. Maybe this one? Nope. Ok, definitely this one… Not a chance baby girl.

I literally must have picked up half a dozen different sauces before giving up. All of them had either sugars of all shapes and sizes, processed vegetable oils, other unidentifiable ingredients, or ALL OF THE ABOVE.

No thank you, ma’am, NO THANK YOU. Have a great day, this girl is OUT.

Not one was ‘clean’?! Really???? You’d think by now some company would have capitalized on the Whole30/paleo/clean eating movement. Shameful.

Welp, I had some extra tomato sauce at home so, I was gonna wing it!

I looked at a variety of different recipes for inspiration, but finally created one myself that is squeaky clean and downright DELICIOUS. Heard that?? DOWNRIGHT DELICIOUS.

Ya’ll better be gettin’ after this pasta sauce. Slather it all over everything. Zoodles, meat, veggies… It tastes great on so much. Dare I say REAL PASTA.

Instructions
  1. In a small pot over medium heat, add tomato sauce and coconut aminos and stir to combine.
  2. Add garlic and onion. Stir well to combine.
  3. Add in spices: oregano, dried basil, salt, pepper. Again, stir well.
  4. Once sauce begins to bubble, cover and reduce heat to low. Stir occasionally for 10 minutes.
  5. Serve over zucchini noodles for the perfect paleo zoodles! Enjoy!
