Well hello there!! You are in for a real treat today my friend! I’ve got some sweet potato toast that is OUT OF THIS WORLD.

If you are like me and are sensitive to gluten, I FEEL YOU DAWG. And because you can’t eat gluten, you feel really left out of the basic white girl community… ‘Cause like, AVO TOAST, duhhh.

Well, fear not! I am HERE FOR YOU.

I’m SUPER PUMPED to share this sweet potato toast recipe with so you can satisfy your basic white girl needs. Sans gluten.

WHY DON’T I EAT GLUTEN YOU ASK?

I stay away from gluten because it makes me bloated, constipated, gassy, fatigued AND gives me brain fog. It’s just not worth it to me.

I thrive off of feeling my best every day. And gluten DOES NOT make me feel my best.

I’m actually pretty sensitive to a lot of things, like inadequate sleep, dehydration, where I’m at in my cycle, foods I put into my body, etc. Unfortunately, some factors I can’t control, but there are plenty that I can. And the easiest thing for me to control is what I put into my body.

If I eat whole foods that are unprocessed, dairy-free and gluten-free, I feel good. Because of this, I never went back to eating foods that are processed or contain gluten/dairy after I started paleo.

But that doesn’t mean I don’t miss a thick New York deli sandwich on a poppy seed roll, an everything bagel with fluffy vegetable cream cheese or fresh out of the oven Bronx style Margherita pizza.

BUT FIRST… A QUICK RANT

I purposefully say, New York, because I grew up just outside of New York City and no other place can beat New York sandwiches, bagels or pizza. And yes, I’ve tried bagels out here in California. I bit the bullet and sacrificed feeling crappy for a few days. And I literally asked around for the best bagels in the Bay Area! It was just NOT GOOD. 

I also will not try the pizza out here. Refuse. If I’m going to feel like crap for a few days it better be some good ass pizza. And I have yet to see or be convinced that there is such a thing out here on the West Coast. Pizza My Heart is NOT good pizza you guys. I can say that with confidence, just by visual.

Ughhh, I digress, as usual…

OK, BACK TO GLUTEN

I definitely miss the all the bread basics, like… TOAST! Almond butter and jelly, anything almond butter really, almond cream cheese and lox, avocado toast… I can’t be a basic white girl if I can’t get some avo toast!! I mean come on!

There are so many different ways to substitute now. Commercial paleo-friendly baked breads are out there! But I just wanted to keep it simple instead of searching around for the perfect paleo bread. And I LOVE sweet potatoes anyways.

THE RECIPE

With that being said, I’m pumped to have THE TOAST OF ALL TOASTS for you to satisfy that basic inner white girl.

I mean even if you can eat gluten you will absolutely fall in love with this sweet potato toast. Don’t these just look AMAZING?!?!

My recipe for getting the sweet potato baked just right so that it’s similar to toast is below. But here are some great ways to jazz up your sweet potato toast if you are looking for some inspiration!

Almond butter and jelly! – My absolute favorite <3

Almond cream cheese, smoked salmon, green onion

Almond butter, apple slices, unsweetened shredded coconut

Almond cream cheese, jelly

Avocado, everything but the bagel seasoning from Trader Joe’s!

Smoked salmon, avocado slices, poppy seeds

Almond butter, strawberries, blueberries

Avocado, runny egg, everything but the bagel seasoning

Almond butter, banana, cacao nibs – My second favorite!! <3

Instructions
  1. Preheat oven to 400’F
  2. Cut the sweet potato into 1/4 inch thick slices. I used a mandolin slicer!
  3. Brush or spray each side with coconut oil and sprinkle with salt.
  4. Line a baking sheet with parchment paper and spray with coconut oil cooking spray.
  5. Arrange sweet potato slices in a single layer on baking sheet.
  6. Bake for 20 minutes on one side. Flip. Then cook another 10 minutes on the opposite side.
  7. Turn your oven to broil. Broil each side for 1 minute.
  8. Let the sweet potato toast cool and top with your favorite toast additions! See my blog post for inspiration 😀
