Sweet Potato Toast
Preheat oven to 400’F
Cut the sweet potato into 1/4 inch thick slices. I used a mandolin slicer!
Brush or spray each side with coconut oil and sprinkle with salt.
Line a baking sheet with parchment paper and spray with coconut oil cooking spray.
Arrange sweet potato slices in a single layer on baking sheet.
Bake for 20 minutes on one side. Flip. Then cook another 10 minutes on the opposite side.
Turn your oven to broil. Broil each side for 1 minute.
